Our Hand-ladled Cheeses are made with raw milk using continuous whey starter method. Cnoc Liatroma is our flagship raw milk goat cheese named after the farm, Leitrim Hill. Feathery, creamy, and tangy when young. Develops a light rind of geotrichum as it ages, layering the supple tangy paste with a hint of pungent woodiness.
