Lisa Gifford’s grandparents were reared in Manorhamilton and Leitrim. Growing up New York Irish she always connected to Ireland spending a lot of time here in the ’60s and ’70s. At the young age of 75 years old, she decided it was time to make Leitrim her permanant home, got some goats, and started making cheese.
She wanted to create a legacy – a legacy that would connect her family history of migration, determintaion, and hard work with her family’s future in the Leitrim community.
Lisa’s independent spirit coupled with her vision for “making something out of nothing” led to the creation of Leitrim Hill Creamery, a micro-creamery in a converted hay shed that produces small batch artisanal dairy products rooted in traditional processes using pure ingredients.

Leitrim Hill Creamery is a small holding goat farm and creamery in Drumcong, County Leitrim. We make small batch artisanal raw milk cheeses utilising milk from our own herd of goats as well as milk from partner farmers in the region. We pride ourselves on our commitment to sustainable practices and the passion for quality that we pour into our craft. Our cheese is the result of the ethos of responsible land stewardship, both on our own farm and the farmers with whom we partner. Great grass, a personally developed microbial culture, raw milk, and thoughtful hands all contribute to the distinct flavour of our Leitrim made cheeses. Our aim is to promote County Leitrim and local Irish cheese producers. Blessed are the cheesemakers!
