Our Hand-ladled Cheeses are made with raw milk using continuous whey starter method. Sliabh An Iarainn is named for the mountain which sits regally in the horizon behind the creamery. Uber creamy, rich, and tangy when young. Develops a light rind of geotrichum as it ages, layering the rich paste with peppery earthiness.
