Raw Cheeses

At Leitrim Hill Creamery we are committed to making artisanal raw milk cheeses using continuous-whey-starter method. Similar to using a sourdough mother, we use the whey from the previous batch to innoculate the next batch of cheese. By not adding commercial starter cultures we enable the natural microflora of the milk to thrive and drive the taste of the cheese. 

Ice Cream

Our Sweet Leitrim Ice Cream is 100% handmade. Our process is simple: upon collecting milk from local goat and cow dairy farmers, we separate the milk into cream and skim milk. We make a custard base with the fresh cream, free-range eggs, sugar, and sea salt. Our flavours are created from locally farmed and foraged produce. We source our chocolate and vanilla with the highest standards of production, land stewardship, and farmers rights in mind.

We want people to be able to taste the seasons of Leitrim with flavours through the year featuring elderflower, bog myrtle, wild berries, black currants, elder berries, wild water mint, bilberries, and more. 

Sweet Leitrim

In addition to cheese, we make a variety of sweet confectionary treats made from milk. With some family history coming from Mexico it only makes sense that we make Cajeta (Cah-hey-tah), a milk jam caramel made from goat’s milk, sugar and vanilla. Spread it on toast or dip apples in it. You will find yourself scooping every last drop out of the jar. Goat’s milk fudge was added to our repertoire in 2022. Our rich fudge makes a wonderful gift or perfect tea-time treat.
